Perhaps not everyone knows, but behind the scenes there's a lot of research at La Canonica (for example, there's a kitchen where they experiment with fermentation). An elegant and contemporary dining room includes an open kitchen, making for an original, increasingly complete experience in a suggestive atmosphere. When it comes to the menu, they play, and even take risks, but all while remaining rooted in a knowledge of the facts: see their horse diaphragm cooked in Kamado with grilled vegetables, roasted potato powder and horse jus, or the creamed risotto with cream of yellow tomatoes, sea urchins, basil and tomato powder. Such dishes are "well studied" in their design and preparation, yet the result is enjoyable and direct. They also offer a nice selection of wines, as well as sake and fermented drinks, all expertly recommended by their passionate sommelier.
