Perbacco is an institution of Italian cuisine in San Francisco thanks to Umberto Gibin that fifteen years ago had the intuition to create a restaurant of particular elegance that reflects the Piedmontese cuisine. For this reason the agnolotti del Plin, that reflect the authenticity of the original recipe, are some of the best that you can find in town. Of particular interest is the risotto with nero di seppia, which reflects the tradition but with its own special twist by using the sardella that gives its unquestionable spice. The service is very professional. The wine list, quite wide and deep, leaves space for some jewels of Italian enology of particular interest.
