Fundamentalists, who only talk about wine and nothing else, those who also devote hours discussing the more or less fruity aromas in a glass can be found sitting in this place located on Via dei Giubbonari, a few cobblestones away from Campo dei Fiori. The wine list is indeed impressive, as is the selection by the glass. The formula of the establishment, that blends together a shop, a wine bar and a restaurant, is truly a winner. The queue outside is, with due proportions, like the queue at the entrance of the Vatican museums. The counter is the corner of temptation featuring everything from cheeses to fine cured meats. Labels for all pockets and palates line the walls of the room. Meals start with Champagne and pizza flatbread, or crazy good black Nebrodi prosciutto. At the restaurant the carbonara is queen, for many considered the best in Rome, followed by gricia and cacio e pepe, both fantastic. The caramelization and crispness of the guanciale pork jowl, is sublime. Consider the rigatoni butter and Parmigiano, too: very good! Book well in advance.
