The Colonìa Resort is a small, elegant hotel situated in the rolling hills, covered by rows of vineyards, just south of Vittorio Veneto. The resort hosts Seda, a restaurant with an intimate and welcoming atmosphere. In one of their subtly charming rooms or at a table on the terrace overlooking the vineyards, they serve cuisine based on expertly selected ingredients, prepared, combined and presented with a delicate hand. Interesting dishes include the rice (vialone nano) creamed with goat robiola with porcini mushrooms, blueberries and foie gras, and the veal cheek cooked 36 hours with mashed potatoes and fried leeks. Excellent desserts (a passion of Alessandro Favrin, who was born into a family of pastry chefs). A wine cellar that's up to the task. Polite service.
