We are on the 102nd floor of the Ritz-Carlton, Sicilian chef Angelo Aglianò, whom we already enjoyed at his Locanda dell'Angelo, replaced Pino Lavarra. And the change of course is certainly evident in the flavours and combinations. Choosing à la carte, we highly recommend the reginelle pasta with sweetbread ragù, mushrooms and Concase tomatoes, as well as the savoury brusiate (typical Sicilian pasta) with sea urchin, wasabi and turnip tops. Among the mains, we appreciated the sea bass in nepitella with Jerusalem artichoke and mullet roe. Prestigious wine list, with some avant-garde references that are not easy to find in the big hotels in Asia. Service in context with the rest.
