The Kelm family came to Italy to offer authentic Argentine cuisine, a version that doesn't play on stereotypes. Fernando and Carolina, husband and wife, started in 2009 with "El Asado", dedicated to food prepared on their large grill (which still stands by the entrance). Having had success and establishing a reputation for quality (thanks to genuine dishes like Carolina's handmade empanadas), in 2013 they changed the name. Fernando is the "asador", an expert in meat and grilling, including offal (their sweetbreads are outstanding). Franco, one of their sons, works in the dining room and looks after a selection of wines that spans Italy and Argentina, while their other two, Matias (a talented pastry chef), and Luca (an appreciated bartender), aren't regular fixtures but come back every now and then to provide their own contribution to the team.
