The company owns about seven hectares of land, divided between vineyards and caper bushes. The capers are produced in three sizes (small, medium and large). The medium ones, measuring 9-10 millimetres, are the backbone of production. They are carefully selected, uniform in size and dark moss green in colour, very fleshy, crunchy and juicy. They have an intense caper aroma and are savoury but not salty on the palate. They are used in the preparation of jams, sauces and pestos.
