The producer's seven hectares host vineyards and capers. The latter are produced in three sizes (small, medium, large). The medium version (about 9-10 millimeters, the backbone of production) are carefully selected, uniform in size and dark, moss-green in color. In the mouth they're quite meaty, crunchy, and juicy. They exhibit the classic, vibrant aromas one expects of capers, while in the palate they're savory but not salty. Perfect for preparing jams, sauces, and pestos.
