VINEYARD | More than a vineyard, it is more appropriate to talk about a few rows that come from the oldest plants on the property. They are grape vines planted in the late 1980s that undergo a rigorous selection to vinify only the best bunches of Chardonnay grapes. The plants have western exposure and have their roots in clayey and sandy gray marl. The winery has been producing Chardonnay Sermine from the same vineyard for several years.
PERSON | First of all it is necessary to talk about the Grasso family, made up of parents Giulio and Luciana and the three very close-knit daughters, Paola, Federica and Valentina. They are the body and soul of the Ca' del Baio winery in Treiso, one of the most prestigious companies for the production of Barbaresco. In this case, however, it is clear from the name of the wine that there is in particular the involvement of Valentina, an oenologist, who wanted to try her hand with a wine that was the mirror of her experience in Burgundy. Only two tonneaux for a production that slightly exceeds 1,600 bottles and a vinification with fermentation and ageing in oak. This is how the second daughter of the Baio family wanted to experiment with the making of a great white wine, employing only Chardonnay grapes.
WINE | Fermentation in the two tonneaux, some weekly batônnage to mix the wine with the noble lees and a racking in steel that takes place as the new vintage approaches. Then in the bottle without filtration. Few and simple operations in the cellar for a result that surprises from the first nose: the kaleidoscope of aromas is not long in coming and immediately primary and secondary sensations appear, captained by touches of medlar, jasmine, candied lemon that blend properly with hints of melted butter, vanilla pod and a delicate note of caramel. The mouth offers the best of itself: enveloping, creamy and tasty, but with a fantastic vertical development. The acidity is masterfully dosed to the material and the wine offers a fresh and vibrant sip, very elegant and very deep. A bottle that is difficult to forget, truly unique and precious.
