VINEYARD | The vineyard from which the Malvasia grapes used for Macerato come is a small plot of one hectare. The western Mediterranean variety is widespread in Sardinia especially in the Bosa area (hence the famous Denomination) and - as in this case - in Southern Sardinia. Located in Serdiana, a town with a strong wine vocation which has given birth to some of the most famous Sardinian wineries, a few kilometres from Cagliari, in the hills. The sea breezes are evident, and the soils are silty and clayey, with an important calcareous presence.
PERSON | Very young winery recently born from the passion of three young friends who became partners in the name of wine. The glue of the group is Paolo Faragò who also gives the name to the estate. Paolo is a native of Catanzaro but knows Sardinia thanks to his profession: as a professional footballer, he played for Cagliari for four years. He has always had a passion for wine and that is why he decided to invest in the land and start producing in the south of the island. The company hectares are 9 of which 6 are vineyards. 8 wines produced for now, of which 4 Classics (obtained with the sole use of steel to best enhance the characteristics of the varieties used) and 4 Selezioni in which we find the Malvasia that we present to you.
WINE | It is worth starting the description starting from the colour, since we are talking about a macerated wine. However, we are certainly not dealing with an orange wine: it is a bright and luminous golden yellow that transpires from this pure Malvasia, despite the 40 days of maceration. The grapes, harvested by hand and destemmed, ferment in contact with the skins in steel tanks, and then age in small wooden barrels and ceramic amphorae for about 6 months. After the correct ageing in the bottle, the wine is put on the market. On the nose are aromas of helichrysum, yellow flowers, noble resin and sweet spices, which anticipate a full-bodied but very harmonious palate. The alcohol is in perfect balance and gives warmth, although freshness is not lacking and the finish all played on sapidity. This manages to make the wine go deep. A gastronomic wine that plays well with different pairings, we tried it with stewed rabbit and we were fully satisfied.
